Ingredients

- 2 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 tablespoon turmeric
- 1 teaspoon ginger, grated
- 1 garlic clove, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until softened.
- Stir in turmeric and ginger. Cook for 1 minute.
- Add chicken broth and bring to a boil.
- Reduce heat and add shredded chicken. Simmer for 10 minutes.
- Season with salt and pepper.
- Serve hot.

- Can substitute chicken with tofu for a vegan option.
