Description
Twice baked potatoes are creamy and cheesy, perfect as a side dish or a main course.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
- 2 green onions, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork.
- Bake the potatoes for 45 minutes until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the insides into a bowl, leaving a little potato on the skin.
- Add cheese, sour cream, milk, butter, salt, and pepper to the bowl and mix until creamy.
- Stir in the green onions.
- Fill the potato skins with the mixture.
- Sprinkle extra cheese on top if desired.
- Return the potatoes to the oven and bake for another 15 minutes.
Notes
- For extra flavor, add bacon bits to the filling.
- These can be made ahead of time and reheated.
- Try different cheese varieties for a unique taste.
