Description

Twice baked potatoes are creamy and cheesy, perfect as a side dish or a main course.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 4 tablespoons butter
  • Salt to taste
  • Pepper to taste
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork.
  3. Bake the potatoes for 45 minutes until tender.
  4. Let the potatoes cool slightly, then cut them in half lengthwise.
  5. Scoop out the insides into a bowl, leaving a little potato on the skin.
  6. Add cheese, sour cream, milk, butter, salt, and pepper to the bowl and mix until creamy.
  7. Stir in the green onions.
  8. Fill the potato skins with the mixture.
  9. Sprinkle extra cheese on top if desired.
  10. Return the potatoes to the oven and bake for another 15 minutes.
