Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix crushed graham crackers and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Beat cream cheese and sugar until smooth.
  5. Add melted white chocolate and vanilla bean to the mixture.
  6. Mix in the eggs, one at a time.
  7. Whip heavy cream until soft peaks form.
  8. Fold whipped cream into the cheesecake mixture.
  9. Pour the mixture over the crust.
  10. Bake for 50-60 minutes or until set.
  11. Cool and refrigerate for at least 4 hours before serving.
