Vegan donuts filled with pistachio pastry cream
Ingredients

- 1 cup all-purpose flour
- 1/2 cup almond milk
- 1/4 cup coconut sugar
- 1/4 cup vegetable oil
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup pistachios, finely chopped
- 1/2 cup coconut cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, coconut sugar, baking powder, baking soda, and salt.
- In another bowl, combine almond milk and vegetable oil.
- Add the wet ingredients to the dry ingredients and mix until smooth.
- Pour the batter into a greased donut pan.
- Bake for 15-20 minutes until golden.
- Let donuts cool.
- In a separate bowl, mix coconut cream, powdered sugar, pistachios, and vanilla to create the pastry cream.
- Fill a piping bag with pistachio cream.
- Poke a hole in each donut and fill with the cream.
