Vegan donuts filled with pistachio pastry cream


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond milk
  • 1/4 cup coconut sugar
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup pistachios, finely chopped
  • 1/2 cup coconut cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, coconut sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine almond milk and vegetable oil.
  4. Add the wet ingredients to the dry ingredients and mix until smooth.
  5. Pour the batter into a greased donut pan.
  6. Bake for 15-20 minutes until golden.
  7. Let donuts cool.
  8. In a separate bowl, mix coconut cream, powdered sugar, pistachios, and vanilla to create the pastry cream.
  9. Fill a piping bag with pistachio cream.
  10. Poke a hole in each donut and fill with the cream.
