Ingredients

- 3 cups of cooked quinoa
- 1 can of black beans, rinsed
- 1 cup of corn
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup of cilantro, chopped
- 2 tablespoons of lime juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, avocado, and cilantro.
- Drizzle lime juice over the mixture.
- Season with salt and pepper.
- Toss gently to combine.
- Serve chilled or at room temperature.
