Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained
- 1 cup corn
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, heat olive oil over medium heat and sauté onion and garlic until translucent.
- Add bell pepper and cook for another 5 minutes.
- Add quinoa and vegetable broth to the pot.
- Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes.
- Stir in black beans and corn. Season with cumin, salt, and pepper.
- Cook for another 5 minutes until heated through.
- Serve warm.
Notes
- This dish can be made ahead of time and reheated.
- Add your favorite spices for extra flavor.
- Garnish with fresh herbs before serving.
