Ingredients

- 2 cups quinoa
- 4 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, cumin, and paprika.
- Season with salt and pepper.
- Serve warm, garnished with fresh cilantro.

- This dish can be made a day in advance.
- Reheat before serving.
