- 2 cups Brussels sprouts, halved
- 1 cup sweet potatoes, cubed
- 1 cup green beans, trimmed
- 1 cup corn kernels
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts, sweet potatoes, and green beans with olive oil, garlic powder, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast for 25-30 minutes, until vegetables are tender.
- In the last 5 minutes, add corn kernels and mix well.
- Remove from the oven and serve warm.

- Feel free to add other seasonal vegetables.
- Adjust spices to your taste.
