Ingredients

  • 1 can of black beans, drained
  • 1 teaspoon of cumin
  • Salt to taste
  • 1 tablespoon of olive oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add bell peppers and corn; sauté for 5 minutes.
  6. Add black beans and cumin; cook for 3 minutes.
  7. Fluff quinoa and mix with sautéed vegetables.
  8. Season with salt and garnish with cilantro.
