Ingredients

  • 1 cup of chopped butternut squash
  • 1 cup of green beans
  • 1/2 cup of cranberries
  • 1/4 cup of walnuts
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the quinoa in vegetable broth according to package instructions.
  3. Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet.
  4. Roast the squash for 25 minutes or until tender.
  5. Blanch the green beans in boiling water for 3 minutes, then shock in ice water.
  6. In a large bowl, combine cooked quinoa, roasted squash, green beans, cranberries, and walnuts.
  7. Toss gently and serve warm.

  • Feel free to add other vegetables like Brussels sprouts or carrots.
