Description

A delicious sushi roll featuring spicy tuna and avocado, topped with baked eel and spicy mayo.


Ingredients

  • 1 cup sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1/2 pound spicy tuna
  • 1 avocado, sliced
  • 1/2 pound eel, cooked
  • 2 tablespoons spicy mayo
  • Soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot, bring to a boil, then cover and simmer for 20 minutes.
  3. Mix rice vinegar, sugar, and salt in a small bowl until dissolved.
  4. Once rice is cooked, let it cool and mix in the vinegar mixture.
  5. Lay a sheet of nori on a bamboo mat.
  6. Spread a layer of rice on the nori, leaving a small edge.
  7. Add spicy tuna and avocado on top of the rice.
  8. Roll the sushi tightly using the mat.
  9. Place cooked eel on top of the roll and drizzle with spicy mayo.
  10. Slice the roll into pieces and serve with soy sauce.
