- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups low-sodium chicken broth
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup tortilla strips
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until soft, about 5 minutes.
- Stir in garlic and cook for an additional minute.
- Add chicken breasts to the pot, followed by diced tomatoes, chicken broth, black beans, corn, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, until chicken is cooked through.
- Remove chicken from the pot, shred it using two forks, and return it to the soup.
- Serve hot, topped with tortilla strips, cilantro, and lime wedges.

- For a spicier soup, add diced jalapeños.
