  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until soft, about 5 minutes.
  3. Stir in garlic and cook for an additional minute.
  4. Add chicken breasts to the pot, followed by diced tomatoes, chicken broth, black beans, corn, cumin, chili powder, salt, and pepper.
