A comforting and hearty white chicken chili perfect for any occasion.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- 1 cup sour cream
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- In a large pot, cook the chicken until no longer pink. Remove and shred.
- Add onion and garlic to the pot and sauté until softened.
- Stir in the cumin and chili powder.
- Add the shredded chicken, white beans, corn, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream and cheese until melted and combined.
- Season with salt and pepper.
- Serve hot.
Notes
- Top with additional cheese or cilantro if desired.
- This chili can be made ahead and frozen for later.
