White Chicken Chili: 7 Comforting Reasons to Swoon

A comforting and hearty white chicken chili perfect for any occasion.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chicken until no longer pink. Remove and shred.
  2. Add onion and garlic to the pot and sauté until softened.
  3. Stir in the cumin and chili powder.
  4. Add the shredded chicken, white beans, corn, and chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in sour cream and cheese until melted and combined.
  7. Season with salt and pepper.
  8. Serve hot.

  • Top with additional cheese or cilantro if desired.
