  • 1 tsp oregano
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the chicken breasts and cook until browned on both sides.
  3. Stir in the green chilies, cumin, oregano, cayenne, salt, and pepper.
  4. Pour in the chicken broth and bring to a simmer.
  5. Cover and cook for 20-25 minutes until the chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Add the white beans and simmer for an additional 10 minutes.
  8. Stir in the sour cream and cheese until melted and combined.
