- 1 lb boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded Monterey Jack cheese
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the chicken breasts and cook until browned on both sides.
- Stir in the green chilies, cumin, oregano, cayenne, salt, and pepper.
- Pour in the chicken broth and bring to a simmer.
- Cover and cook for 20-25 minutes until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Add the white beans and simmer for an additional 10 minutes.
- Stir in the sour cream and cheese until melted and combined.
- Serve hot, garnished with cilantro.
Notes
- For a spicier version, add more cayenne or jalapeños.
- Can substitute chicken with turkey or a plant-based protein.
