A simple and healthy Whole30 crockpot recipe for a nutritious meal.
Ingredients

- 2 lbs of chicken thighs
- 1 cup of diced tomatoes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 bell pepper, sliced
- 2 cups of spinach
- 2 tablespoons of olive oil
- 1 tablespoon of Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in the crockpot.
- Add chicken thighs and season with salt, pepper, and Italian seasoning.
- Add chopped onion, garlic, bell pepper, and diced tomatoes on top of the chicken.
- Cook on low for 6-8 hours or high for 4 hours.
- In the last 30 minutes, stir in the spinach.
- Serve hot and enjoy.

- Adjust seasoning as needed.
- Feel free to add other vegetables.
- Store leftovers in the fridge for up to 3 days.
