Ingredients

  • 1 cup of diced tomatoes
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 2 cups of spinach
  • 2 tablespoons of olive oil
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in the crockpot.
  2. Add chicken thighs and season with salt, pepper, and Italian seasoning.
  3. Add chopped onion, garlic, bell pepper, and diced tomatoes on top of the chicken.
  4. Cook on low for 6-8 hours or high for 4 hours.
  5. In the last 30 minutes, stir in the spinach.
  6. Serve hot and enjoy.
