Ingredients

- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together zucchini, sugars, oil, eggs, and vanilla.
- In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before frosting.
Notes
- Store in an airtight container.
- Can substitute applesauce for oil for a lighter option.
- Use nuts or chocolate chips for added flavor.
