Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix zucchini, sugars, oil, eggs, and vanilla.
  3. In another bowl, combine flour, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients.
  5. Fold in chocolate chips.
  6. Pour batter into muffin tins lined with paper liners.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Store in an airtight container.
  • Can substitute half of the flour with whole wheat flour.
  • Add nuts for extra crunch if desired.
