Delicious and moist zucchini chocolate chip muffins.
Ingredients

- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix zucchini, sugars, oil, eggs, and vanilla.
- In another bowl, combine flour, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients.
- Fold in chocolate chips.
- Pour batter into muffin tins lined with paper liners.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container.
- Can substitute half of the flour with whole wheat flour.
- Add nuts for extra crunch if desired.
