Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped green onions
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a bowl.
  2. Add salt and let it sit for 10 minutes.
  3. Drain excess moisture from the zucchinis.
  4. In a large bowl, mix zucchinis, flour, Parmesan cheese, egg, pepper, garlic powder, and green onions.
  5. Heat oil in a skillet over medium heat.
  6. Scoop the zucchini mixture and flatten it into patties.
  7. Fry each fritter for 3-4 minutes until golden brown.
  8. Drain on paper towels and serve warm.
