Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons olive oil for frying
Instructions
- Grate the zucchinis and place them in a bowl.
- Add salt and let them sit for 10 minutes.
- Squeeze out excess moisture from the zucchinis.
- Add flour, Parmesan cheese, egg, black pepper, and garlic powder to the bowl.
- Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet.
- Cook for 3-4 minutes on each side until golden brown.
- Remove from skillet and place on a paper towel to drain excess oil.
- Serve warm.
Notes
- Use fresh zucchini for better flavor.
- Adjust seasoning as per your taste.
- These can be frozen after cooking.
