Description
Zucchini lasagna roll ups are a healthy twist on traditional lasagna. They are filled with ricotta, spinach, and marinara sauce.

- 4 medium zucchinis
- 15 oz ricotta cheese
- 1 cup spinach, chopped
- 1 cup marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 egg
- 1 tsp garlic powder
- 1 tsp Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta, spinach, egg, garlic powder, and Italian seasoning.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Take a zucchini strip, place a spoonful of the ricotta mixture on one end, and roll it up.
- Place the roll seam side down in the baking dish.
- Repeat until all zucchinis are filled.
- Top with remaining marinara sauce and sprinkle mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until cheese is bubbly.
Notes
- Choose firm zucchinis for better rolling.
- Feel free to add other vegetables to the filling.
- Let cool for a few minutes before serving.
