Description

Zucchini lasagna roll ups are a healthy twist on traditional lasagna. They are filled with ricotta, spinach, and marinara sauce.


Ingredients

  • 4 medium zucchinis
  • 15 oz ricotta cheese
  • 1 cup spinach, chopped
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta, spinach, egg, garlic powder, and Italian seasoning.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Take a zucchini strip, place a spoonful of the ricotta mixture on one end, and roll it up.
  6. Place the roll seam side down in the baking dish.
  7. Repeat until all zucchinis are filled.
  8. Top with remaining marinara sauce and sprinkle mozzarella and Parmesan cheese.
  9. Bake for 25-30 minutes until cheese is bubbly.

Notes

  • Choose firm zucchinis for better rolling.
  • Feel free to add other vegetables to the filling.
  • Let cool for a few minutes before serving.
