Description
A hearty Italian soup featuring sausage, kale, and potatoes.
Ingredients

- 1 lb Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 medium potatoes, diced
- 2 cups kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
- 1 teaspoon red pepper flakes (optional)
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, add onion and garlic. Sauté until translucent.
- Add chicken broth and diced potatoes. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in the kale and cooked sausage. Simmer for 5 minutes.
- Pour in heavy cream and stir to combine. Season with salt, pepper, and red pepper flakes if desired.
- Serve hot, garnished with additional kale if desired.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Try adding carrots or celery for extra texture.
- Garnish with grated Parmesan for added flavor.
