Description

Ingredients

Scale
  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, add onion and garlic. Sauté until translucent.
  3. Add chicken broth and diced potatoes. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in the kale and cooked sausage. Simmer for 5 minutes.
  6. Pour in heavy cream and stir to combine. Season with salt, pepper, and red pepper flakes if desired.
  7. Serve hot, garnished with additional kale if desired.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
