Ingredients
Scale
- 2 cups of rice
- 1 lb of lamb, cut into pieces
- 1 onion, chopped
- 2 tomatoes, diced
- 4 cups of water
- 2 tablespoons of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- Salt to taste
- Pine nuts for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until golden.
- Add lamb pieces and brown on all sides.
- Stir in diced tomatoes, cumin, coriander, and salt.
- Add rice and water, bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let it sit for 10 minutes.
- Fluff rice with a fork and garnish with pine nuts.
Notes
- Adjust spices according to your taste.
- Serve with a side of yogurt.
- Can substitute lamb with chicken.
