Ingredients

  • 2 tomatoes, diced

  • Pine nuts for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until golden.
  3. Add lamb pieces and brown on all sides.
  4. Stir in diced tomatoes, cumin, coriander, and salt.
  5. Add rice and water, bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Remove from heat and let it sit for 10 minutes.
  8. Fluff rice with a fork and garnish with pine nuts.
