  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until soft.
  4. Add black-eyed peas, water, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 45 minutes or until peas are tender.
  7. Remove bay leaf before serving.
