Ingredients

- 1 bag of black-eyed peas (16 oz)
- 4 cups of water
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add black-eyed peas, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 45 minutes or until peas are tender.
- Remove bay leaf before serving.
Notes
- Soaking peas overnight can reduce cooking time.
- Adjust seasoning as per your taste.
- This dish pairs well with rice.
