Buckeyes candy are chocolate-covered peanut butter balls that are a favorite treat in the Midwest.

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semisweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract.
- Mix until well blended.
- Roll the mixture into small balls and place them on a baking sheet.
- Chill the balls in the refrigerator for about 30 minutes.
- In a microwave-safe bowl, melt chocolate chips and vegetable oil until smooth.
- Dip each peanut butter ball halfway into the chocolate and return to the baking sheet.
- Chill again until the chocolate is set.
Notes
- Store in an airtight container.
- For a smoother chocolate coating, add more vegetable oil.
- Use different types of chocolate for variety.
