Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1 cup of rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 4 cups of chicken broth
  • 2 tablespoons of Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, bell pepper, and celery until soft.
  2. Add garlic and cook for another minute.
  3. Stir in the andouille sausage and cook until browned.
  4. Add shrimp and cook until they turn pink.
  5. Stir in rice, chicken broth, and Cajun seasoning.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Fluff with a fork and serve hot.
