- 1 lb Cajun sausage, sliced

- 1 bell pepper, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup heavy cream
- 1 tsp Cajun seasoning
- Salt and pepper to taste
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the sliced sausage and cook until browned.
- Add the bell pepper, onion, and garlic. Sauté until vegetables are tender.
- Stir in the diced tomatoes, heavy cream, and Cajun seasoning.
- Simmer for 5 minutes, allowing the sauce to thicken.
- Add the cooked pasta and mix well.
- Season with salt and pepper to taste.
- Serve hot.
