Description

A quick and easy Hoppin’ John recipe made in the Instant Pot.


Ingredients

  • 1 cup dried black-eyed peas
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse and soak the black-eyed peas for at least 1 hour.
  2. Set the Instant Pot to sauté and heat the olive oil.
  3. Add the onion and bell pepper, cooking until softened.
  4. Stir in the garlic, smoked paprika, and cayenne pepper.
  5. Add the soaked black-eyed peas, chicken broth, and bay leaf.
  6. Close the lid and set the Instant Pot to manual high pressure for 15 minutes.
  7. Allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
  8. Remove the bay leaf, season with salt and pepper, and serve.

  • This dish is traditionally served with rice.
