A quick and easy Hoppin’ John recipe made in the Instant Pot.
Ingredients

- 1 cup dried black-eyed peas
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 4 cups chicken broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse and soak the black-eyed peas for at least 1 hour.
- Set the Instant Pot to sauté and heat the olive oil.
- Add the onion and bell pepper, cooking until softened.
- Stir in the garlic, smoked paprika, and cayenne pepper.
- Add the soaked black-eyed peas, chicken broth, and bay leaf.
- Close the lid and set the Instant Pot to manual high pressure for 15 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure.
- Remove the bay leaf, season with salt and pepper, and serve.
Notes
- This dish is traditionally served with rice.
- Adjust spices according to your heat preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
