Description

Ingredients

  • 1 cup dried black-eyed peas
  • 1 cup long-grain rice
  • 3 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 smoked ham hock

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse peas.
  3. In a pot, sauté onion, garlic, and bell pepper.
  4. Add peas, rice, ham hock, water, and spices.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Remove ham hock, shred meat, and return to pot.
  7. Pack mixture into sterilized jars, leaving 1-inch headspace.
  8. Seal jars and process in a pressure canner for 75 minutes.
