Delicious cheesecake topped with a fresh berry compote.
Ingredients

- 8 oz cream cheese
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup water
- 2 tbsp lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla and sour cream.
- Pour the mixture into a greased springform pan.
- Bake for 50 minutes or until set.
- Let it cool, then refrigerate for 4 hours.
- In a saucepan, combine berries, water, and lemon juice.
- Cook over medium heat until berries break down, about 10 minutes.
- Cool the compote and pour over the cheesecake before serving.
Notes
- Use fresh or frozen berries for the compote.
- Let the cheesecake chill overnight for better texture.
- Adjust sweetness of the compote to taste.
