Ingredients

- 500g all-purpose flour
- 200g golden syrup
- 75g lard
- 1/2 tsp alkaline water
- 200g lotus seed paste
- 50g salted egg yolks
- 1 egg wash (1 egg, beaten)
Instructions
- Preheat your oven to 180°C (350°F).
- Mix flour, golden syrup, lard, and alkaline water in a bowl.
- Knead the dough until smooth.
- Divide dough into small balls.
- Flatten each ball and place lotus seed paste and salted egg yolk in the center.
- Wrap the dough around the filling and shape it into a ball.
- Press each ball into a mooncake mold.
- Place mooncakes on a baking sheet.
- Brush with egg wash.
- Bake for 20-25 minutes until golden brown.
Notes
- Let mooncakes cool before serving.
- Store in an airtight container.
- Best enjoyed after a few days for flavors to meld.
