Ingredients

  • 1 cup chopped nuts
  • 1 cup unsweetened applesauce
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large bowl, mix the dried fruits and nuts.
  3. In another bowl, combine flour, baking powder, cinnamon, and nutmeg.
  4. In a separate bowl, whisk together applesauce, brown sugar, oil, eggs, vanilla, and orange juice.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. Fold in the fruit and nut mixture.
  7. Pour the batter into a greased cake pan.
  8. Bake for 45-55 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.
