Coconut buckeyes are a delicious treat made with coconut and peanut butter, coated in chocolate.

- 1 cup peanut butter
- 1/2 cup shredded coconut
- 1/4 cup powdered sugar
- 1/4 cup butter, softened
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a bowl, mix peanut butter, shredded coconut, powdered sugar, and softened butter.
- Form the mixture into small balls and place them on a baking sheet.
- Chill the balls in the refrigerator for about 30 minutes.
- In a microwave-safe bowl, melt chocolate chips and coconut oil together.
- Dip each ball into the melted chocolate, coating them completely.
- Place the chocolate-coated balls back on the baking sheet.
- Refrigerate until the chocolate hardens.
Notes
- Store in an airtight container in the refrigerator.
- Can substitute almond butter for a different flavor.
- Use dark chocolate for a richer taste.
