Ingredients
Scale
- 1 cup sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/4 cup corn syrup
- 1/2 teaspoon food coloring (optional)
Instructions
- Combine sugar, water, lemon juice, and corn syrup in a saucepan.
- Heat over medium heat until sugar dissolves.
- Add food coloring if desired.
- Increase heat and boil until mixture reaches 300°F (hard crack stage).
- Remove from heat and let cool slightly.
- Carefully pour into the copper lobster mold.
- Allow to cool and harden completely before removing from the mold.
Notes
- Ensure the mold is well greased for easy removal.
- Use a candy thermometer for accurate temperature readings.
- Store finished lobsters in a cool, dry place.
