Description
A rich and creamy lobster bisque made with fresh lobster and aromatic spices.
Ingredients

- 2 lobsters (about 1.5 pounds each)
- 4 cups fish stock
- 1 cup heavy cream
- 1/2 cup white wine
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- Cook the lobsters in boiling water for 8-10 minutes. Remove and let cool.
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for an additional minute.
- Stir in tomato paste and paprika, cooking for 2 minutes.
- Add white wine and fish stock, bringing to a boil.
- Reduce heat and simmer for 20 minutes.
- Remove lobster meat from shells and chop into pieces.
- Add lobster meat to the pot and simmer for 10 minutes.
- Stir in heavy cream and heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh chives.

- Use fresh lobster for the best flavor.
- Adjust seasoning to your preference.
- Can be made ahead and reheated before serving.
