Ingredients

  • 2 lobsters (about 1.5 pounds each)
  • 4 cups fish stock
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Cook the lobsters in boiling water for 8-10 minutes. Remove and let cool.
  2. In a large pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for an additional minute.
  4. Stir in tomato paste and paprika, cooking for 2 minutes.
  5. Add white wine and fish stock, bringing to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Remove lobster meat from shells and chop into pieces.
  8. Add lobster meat to the pot and simmer for 10 minutes.
  9. Stir in heavy cream and heat through.
  10. Season with salt and pepper to taste.
  11. Serve hot, garnished with fresh chives.
