Creamy spinach and mushroom orzo is a one-pan comfort dish that you can prepare in just 30 minutes.


Ingredients

  • 1 cup orzo
  • 2 cups vegetable broth
  • 1 cup fresh spinach
  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and sauté for 1 minute.
  3. Add mushrooms and cook until soft.
  4. Stir in orzo and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add spinach and heavy cream, stirring well.
  7. Cook for another 5 minutes until creamy.
  8. Stir in Parmesan cheese and season with salt and pepper.
  9. Serve warm.

Notes

  • For a vegan option, replace heavy cream with coconut milk and omit Parmesan.
  • You can add other vegetables like peas or bell peppers.
