Description
Creamy spinach and mushroom orzo is a one-pan comfort dish that you can prepare in just 30 minutes.
Ingredients

- 1 cup orzo
- 2 cups vegetable broth
- 1 cup fresh spinach
- 1 cup sliced mushrooms
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté for 1 minute.
- Add mushrooms and cook until soft.
- Stir in orzo and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add spinach and heavy cream, stirring well.
- Cook for another 5 minutes until creamy.
- Stir in Parmesan cheese and season with salt and pepper.
- Serve warm.
Notes
- For a vegan option, replace heavy cream with coconut milk and omit Parmesan.
- You can add other vegetables like peas or bell peppers.
- Store leftovers in an airtight container in the fridge for up to 3 days.
