Ingredients

- 1 cup black-eyed peas, soaked overnight
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 1 teaspoon Creole seasoning
- 4 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Drain and rinse the soaked black-eyed peas.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, bell pepper, and celery. Sauté until softened.
- Stir in Creole seasoning and cook for 1 minute.
- Add black-eyed peas, vegetable broth, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 45-60 minutes, until peas are tender.
- Season with salt and pepper before serving.
Notes
- This dish can be served over rice.
- Adjust the seasoning to your taste.
- Leftovers can be stored in the fridge for up to 3 days.
