Ingredients

- 1 lb chicken breast, diced
- 1 can (13.5 oz) coconut milk
- 4 cups chicken broth
- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Place chicken, coconut milk, and chicken broth in the crockpot.
- Add mushrooms, bell pepper, garlic, ginger, curry paste, fish sauce, and lime juice.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken before serving.
- Garnish with cilantro and serve hot.
Notes
- Adjust the spice level by adding more or less curry paste.
- Use vegetable broth for a vegetarian version.
- Add vegetables like spinach or carrots for extra nutrition.
