Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 3 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
- 1 cucumber, julienned
- 1 avocado, sliced
- 4 ounces crab meat or tofu
- Soy sauce for dipping
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot, bring to a boil, then reduce heat and simmer for 20 minutes.
- Mix rice vinegar, sugar, and salt in a small bowl; heat until dissolved.
- Once rice is cooked, fluff it with a fork and mix in the vinegar solution.
- Lay a sheet of nori on a bamboo mat.
- Spread a thin layer of rice over the nori, leaving a small border.
- Add cucumber, avocado, and crab meat or tofu in a line across the rice.
- Roll the sushi tightly using the mat.
- Slice the roll into bite-sized pieces.
- Serve with soy sauce.

- Use a sharp knife to cut sushi for clean edges.
- Keep your hands wet when handling rice.
