Ingredients

  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 4 ounces crab meat or tofu
  • Soy sauce for dipping

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot, bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Mix rice vinegar, sugar, and salt in a small bowl; heat until dissolved.
  4. Once rice is cooked, fluff it with a fork and mix in the vinegar solution.
  5. Lay a sheet of nori on a bamboo mat.
  6. Spread a thin layer of rice over the nori, leaving a small border.
  7. Add cucumber, avocado, and crab meat or tofu in a line across the rice.
  8. Roll the sushi tightly using the mat.
  9. Slice the roll into bite-sized pieces.
  10. Serve with soy sauce.
