Description
Elote en vaso is a popular Mexican street food made with corn served in a cup.
Ingredients

- 4 ears of corn
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled cotija cheese
- 1 tablespoon chili powder
- 1 lime, juiced
- Salt to taste
Instructions
- Boil the corn for 10 minutes until tender.
- Remove the corn from the cob and place it in a large bowl.
- Add mayonnaise, sour cream, lime juice, and salt to the corn.
- Mix well to combine all ingredients.
- Serve the corn mixture in cups.
- Top with cotija cheese and chili powder.
Notes
- Adjust the spice level by adding more or less chili powder.
- Can substitute cotija cheese with feta cheese.
- Best served immediately.
