A rich and festive peppermint bark cake perfect for holiday celebrations.
Ingredients

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup crushed peppermint candies
- 1 cup white chocolate chips
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients. Mix well.
- Stir in boiling water until well combined.
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a saucepan, heat heavy cream until just boiling. Pour over white chocolate chips and let sit for 5 minutes, then stir until smooth.
- Layer the cakes with crushed peppermint and white chocolate ganache in between.
- Top the cake with remaining ganache and crushed peppermint candies.
Notes
- Store in an airtight container for up to 3 days.
- Use dark chocolate for a richer flavor.
- Adjust peppermint quantity to taste.
