Ingredients

- 2 lbs chicken thighs
- 1 cup BBQ sauce
- 1/2 cup chicken broth
- 1 onion, chopped
- 1 bell pepper, sliced
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 8 hamburger buns
- Coleslaw for topping (optional)
Instructions
- Place chicken thighs in the crockpot.
- Add BBQ sauce, chicken broth, onion, bell pepper, garlic powder, onion powder, salt, and pepper.
- Stir to combine ingredients.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred the chicken with two forks.
- Serve on hamburger buns and top with coleslaw if desired.

- Adjust BBQ sauce to taste.
- Can substitute chicken thighs with chicken breasts.
