Ingredients

  • 2 lbs chicken thighs
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 8 hamburger buns
  • Coleslaw for topping (optional)

Instructions

  1. Place chicken thighs in the crockpot.
  2. Add BBQ sauce, chicken broth, onion, bell pepper, garlic powder, onion powder, salt, and pepper.
  3. Stir to combine ingredients.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Shred the chicken with two forks.
  6. Serve on hamburger buns and top with coleslaw if desired.
