Ingredients

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1/4 cup molasses
- 1/4 cup brewed coffee, cooled
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and nutmeg.
- In another bowl, cream butter and brown sugar until fluffy.
- Add egg, molasses, and coffee to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet mixture.
- Fold in white chocolate chips.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes until edges are golden.
- Let cool on a wire rack.
Notes
- Store cookies in an airtight container.
- For a stronger coffee flavor, increase the coffee amount.
- Substitute white chocolate chips with dark chocolate if preferred.
