Description
Grilled zucchini nachos are a healthy twist on traditional nachos, using zucchini slices as the base instead of chips.
Ingredients

- 2 medium zucchinis
- 1 cup shredded cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium heat.
- Slice the zucchinis into thin rounds.
- Brush the zucchini slices with olive oil and season with salt and pepper.
- Grill the zucchini for 3-4 minutes on each side until tender.
- Layer the grilled zucchini on a serving plate.
- Top with black beans, diced tomatoes, jalapeños, and shredded cheese.
- Return to the grill for 2-3 minutes until the cheese melts.
- Remove from the grill and add sour cream and cilantro on top before serving.
Notes
- Use a grill mat to prevent small zucchini slices from falling through the grill.
- Feel free to add other toppings like avocado or salsa.
