Description

Grilled zucchini nachos are a healthy twist on traditional nachos, using zucchini slices as the base instead of chips.


Ingredients

  • 2 medium zucchinis
  • 1 cup shredded cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Slice the zucchinis into thin rounds.
  3. Brush the zucchini slices with olive oil and season with salt and pepper.
  4. Grill the zucchini for 3-4 minutes on each side until tender.
  5. Layer the grilled zucchini on a serving plate.
  6. Top with black beans, diced tomatoes, jalapeños, and shredded cheese.
  7. Return to the grill for 2-3 minutes until the cheese melts.
  8. Remove from the grill and add sour cream and cilantro on top before serving.
