A hearty and flavorful ham bone soup that warms you up.
Ingredients

- 1 ham bone
- 6 cups water
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 potatoes, cubed
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup frozen peas
Instructions
- In a large pot, combine the ham bone and water.
- Add onion, carrots, celery, potatoes, garlic, bay leaf, and thyme.
- Bring to a boil, then reduce heat to a simmer.
- Cook for about 1 hour until vegetables are tender.
- Remove the ham bone, shred the meat, and return it to the pot.
- Add peas and season with salt and pepper.
- Simmer for another 10 minutes.
- Serve hot.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This soup freezes well.
- Add more vegetables as desired.
