Ingredients

  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 1 can of black beans, rinsed and drained
  • 1 cup of corn, frozen or canned
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine black beans, corn, bell pepper, and avocado.
  6. Add the cooled quinoa to the bowl.
  7. Season with cumin, chili powder, salt, pepper, and lime juice.
  8. Toss everything together and serve.

  • This dish can be served warm or cold.
