Description

Ingredients

Instructions

  1. In a heatproof bowl, whisk together egg yolks and lemon juice until thick.
  2. Place the bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water.
  3. Slowly drizzle in the melted butter while whisking constantly.
  4. Continue whisking until the sauce thickens and becomes creamy.
  5. Add salt and cayenne pepper to taste.
  6. Remove from heat and serve immediately.
