Description

Hoppin’ John is a Southern dish made with black-eyed peas and rice, traditionally served on New Year’s Day for good luck.


Ingredients

  • 1 cup black-eyed peas
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Optional: diced ham or bacon

Instructions

  1. Soak black-eyed peas overnight, then drain.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic; sauté until soft.
  4. Add black-eyed peas, chicken broth, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add rice and stir; cover and cook for 20 minutes, or until rice is done.
  7. Remove bay leaf before serving.

Notes

  • Serve with cornbread for a complete meal.
  • For a vegetarian option, omit meat.
