A simple and nutritious recipe for cooking black-eyed peas in an Instant Pot.

- 1 cup dried black-eyed peas
- 4 cups water or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- In the Instant Pot, add the rinsed peas, water or broth, onion, garlic, salt, pepper, cumin, and bay leaf.
- Close the lid and set the valve to sealing.
- Cook on high pressure for 10 minutes.
- Allow natural release for 10 minutes, then quick release the remaining pressure.
- Remove bay leaf before serving.
Notes
- Adjust seasoning to taste.
- Soaking peas is optional but can reduce cooking time.
- Serve with rice or cornbread.
