A flavorful and easy-to-make Korean veggie fried rice.
Ingredients

- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 1 egg (optional)
Instructions
- Heat sesame oil in a pan over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Add mixed vegetables and cook until tender.
- Stir in cooked rice and soy sauce.
- Cook for 5 minutes, stirring occasionally.
- Add green onions, mix well.
- If using, push rice to one side, crack the egg, scramble and mix with rice.
Notes
- Use day-old rice for better texture.
- Adjust soy sauce to taste.
- Add protein like tofu or chicken for more nutrition.
