A comforting and hearty lasagna soup that combines all the flavors of traditional lasagna in a delicious bowl.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 2 cups lasagna noodles, broken
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef with the onion and garlic.
- Add crushed tomatoes, chicken broth, and Italian seasoning. Stir well.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add broken lasagna noodles and cook until tender, about 10 minutes.
- Stir in ricotta cheese and half of the mozzarella cheese until melted.
- Serve hot, topped with remaining mozzarella and Parmesan cheese.
Notes
- For a vegetarian option, substitute ground beef with mushrooms or lentils.
- You can add vegetables like spinach or zucchini for extra nutrition.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
